?While London has seen a great explosion in excellent Indian restaurants over the last decade ? there has been little change up North. Until, that is, Kuldeep Singh of Mela teamed up with Ravi Bajaj to open Dilli, in Altrincham, just over a year ago.
?Bajaj is clear that he wants to avoid the hot-curry-and-lager crowd: the menu is based on Ayurvedic principles, spicing is gentle, and the kitchen is experienced in catering for dietary restrictions ... a popular dish is methi (fenugreek) chicken, which is apparently good for anyone with heart disease or diabetes; Bajaj recommends pigeon dishes for people troubled by impotence or epilepsy. Dilli even has dishes to combat Seasonal Affective Disorder.
?The gratifying aspect of healthy Indian cooking, whether or not you are a strict acolyte of Ayurveda, is that the principles enshrined in ancient texts - and still practised today by such enlightened souls as Bajaj and Todiwala - are actually the principles of good cooking: careful preparation, the avoidance of overcooking, gentle and harmonious spicing.?
