?It?s an uncompromising experience but a refreshing one, taking vintage Indian recipes, cooking them slowly, and balancing herbs with spices, fiery chillies with cooling cream, nutty lentils with aromatic fenugreek and cardamom.

?There is more than gastronomy at work here - the recipes adhere to Ayurvedic principles, India?s traditional healthcare philosophy.

?In Ayurveda, good digestion is essential to good health. Balance is everything, and too much fire is the greatest sin of all - odd, when you consider the sledgehammer flavours most of us are used to when we ?go? for an ?Indian??

?And it?s not just the food. Dilli?s quiet, efficient staff glide about, helping with suggestions, filling your glass, offering to fan the flames of your digestive tract with yoghurt if, at any moment, you look in danger of getting dangerously out of balance.
